<Tressa> We are a well oiled machine.
♪ [bluegrass music] ♪ <Carrie> I took my mom's best recipe and started selling handmade Southern biscuits.
Now I'm balancing a family, a business and biscuits every day.

I'm Carrie Morey.
And this is how I roll.
♪ [calm music] ♪ [street sounds] <Customer> It's about 5 o'clock in the morning, and it's 30 degrees out here.
We saw the ad for free coffee for a year for the first 10 people in line.
We're very committed to be the first 10 people in line.
<Producer> What do you know about Callie's biscuits?
<Customer> Lot of great reviews.
I've heard really great things.
Never tried it.
So, I'm really looking forward to this morning.
♪ [calm music] ♪ <Carrie> Look at these people who've been out here since 5.
It's 35 degrees outside, are they crazy?
So, let's give them what they came for.
♪ [relaxing music] ♪ Why do I have these retail stores?
That is a great question.
I started by selling frozen biscuits online and in grocery stores.
People kept asking me where can we get the biscuits hot and I was - didn't want to open a restaurant because I had young children and I tried to get other people in the community to sell them for me and serve 'em hot and just kept coming up with no.
So, I needed to solve that problem.
And so I decided to open up the Hot Little Biscuit Bake Shop.
We have two locations in Charleston, one on King Street and one in The Market.
And we have a location in Atlanta and "Butter" the Biscuit truck and we're under construction in Charlotte.
♪ [upbeat music] ♪ <Carrie> Let's see.
What else is happening.
I wrote these notes at two o'clock in the morning.
I can't figure out what that is.
Charlotte is underway.
We can see pictures of the progress every day.
We are in construction, right now with Charlotte.
It's took us six months past the start date, which was frustrating and now it's moving super fast and I need to get on board.
I need to finalize the equipment list.
I need to go up there.
I need to start thinking about staffing it.
We've got a lot to do.
I'm getting a little nervous.
And on top of all that my daughter Cate's birthday is the day before we launch in Charlotte.
I have to be in Charleston for that.
♪ [bluegrass music] ♪ I still feel like it could end tomorrow like it could fail and... <Don> You should feel those concerns.
You know, the revenue has continued to grow.
Take advantage of that.
Continue to take advantage of that.
That's what you've been doing.
And don't stop now.
>> That's good advice.
Are you going to promise to tell me if I'm going too far?
[laughs] >> Not on the air I won't!
[laughs] ♪ [bright music] ♪ <Carrie> There's a lot to do to get Charlotte ready and a lot of boxes to check off.
But I also have to make dinner for my family and it's a good thing I have Julia, because I can make supper and get the list for Charlotte ready at the same time.
<Cate> I brought it up to a high B.
<Carrie> Okay, just remember, no phone, if you have any C's.
<Cate> But I have an A in math.
>> Great, but I just want to remind you of the rules.
<Julia> One worktop freezer?
>> Ah, yes.
That's a biscuit freezer for the biscuit area.
Okay, what else?
>> That's what we need.
Yes.
<Julia> Okay.
>> And that ventless fryer, which will fry all of our chicken without a hood.
<Julia> Okay, So that's everything.
<Carrie> Uh huh.
Tonight's supper, it's vinegar, turmeric, chicken thighs that I'll roast in the oven for like 30 minutes.
♪ [upbeat music] ♪ <Carrie> I think I've been terrified to do something out of Charleston because I thought maybe it was just a Charleston thing.
And it didn't have legs to stand on its own.
♪ [upbeat music continues] ♪ <Carrie> We are in Charlotte, North Carolina, for our new opening of our fourth location.
♪ [upbeat music] ♪ We decided upon Charlotte because for our online business, it is the third most shipped to city.
<Carrie> You have the keys?
This doesn't even fit.
Where's the lockbox?
<Employee> Oh, sorry.
It's on the side of the door.
<Carrie> Ahhhh!
♪ [dramatic music] ♪ <Carrie> We definitely have to get the store set up right.
And that includes getting the right people and the best.
I can teach people how to make biscuits, I can't teach attitude.
And that's everything.
<Tressa> So, I think I'm going to fit in.
>> My new General Manager for Charlotte, her name is Tressa.
And this is probably the first person that I have hired without meeting in person before I hired her.
<Carrie and Tressa> Hi!
<Carrie> It's been so fun today to actually meet her and actually confirm that she's got the energy.
<Tressa> That's why we're here.
The first impression is she's super tall.
And she is very kind.
So, we hugged it out and got me straight to work.
<Carrie> We need to get a stand alone coffee bar here.
What if I were to just find a cool space, we've already measured it, to do cream, sugar, >> I would like that.
<Carrie> We would have to build something to keep it under.
What else needs to be here, grinds?
>> A gun would be perfect, especially if someone would want to do like a nice latte or something like that.
>> The thing that's most likely to go wrong is... <Carrie> Have you ever made biscuits?
>> I have made my own.
Maybe I make a few biscuits wrong.
That's like the biggest thing.
Don't tell Carrie.
♪ [joyful music] ♪ <Carrie> Why do you want to work here?
What is it?
It's not just a job.
You're coming into my family, I want you to be a part of it.
I want you to understand the culture that I'm trying to build.
If I were to say, "Alright, I'm going to hire you," tell me what your strengths are.
Well, it's definitely going to be fast paced here.
So that is important.
What do you want to do in 5 years?
What are your goals?
Your smile makes my day?
I am telling you right now, like, you, I love your energy.
Did you hear what he said when I said why did you apply for the job?
He said because, "my mama told me to."
I love that.
I think he's definite yes.
<Amy> Definite Yes.
♪ [calming music] ♪ <Carrie> The number one reason, I started a business was so that I could have balance and be at home with my girls and be involved in the food world in a professional way.
<Carrie> Thank you so much.
Y'all have a good day.
My family is John, my husband, and our three daughters, Caroline, Cate, and Sarah.
And then we have two dogs.
<John> Her commitment to her family will never leave.
That's the beginning.
<Carrie> One thing is constant.
We always meet back at home for family supper.
That's important.
[dishes clanging] ♪ [bright music] ♪ <Julia> We are trying to complete the final shelving and we needed Carrie's approval on exactly where to put it.
So we don't have to move it like Tom's doing right now, moving the shelving up.
Oh, she's not available.
She might be on the airplane.
Flight to Atlanta.
9:53...9:49 to 11:29.
So, one more snag, we'll have to wait.
♪ [upbeat music] ♪ How in the world are you supposed to get this like level?
♪ Okay, Does that look level?
My level says it's level, but it doesn't look level.
♪ [upbeat music continues] ♪ We're level.
♪ [Call ring tone, " Bad to the Bone "] ♪ <Julia> Hey, oh, hold on, I think... Can you hear me?
You're on camera double.
Um, okay.
<Carrie> So, then what goes underneath those metal shelves is the stainless steel big shelf.
Didn't you order three of that same long size?
Three total?
<Carrie> Do you know where they go?
They go right below.
<Julia> Okay, so <Carrie> Yep.
That reminds me we need a round, clear cambro to put ground coffee in, so I'm going to try to remember after this call to put that on my list.
I'll be up there Wednesday and Friday.
We've got to have everything ready to go by Wednesday.
<Julia> I have one table put together for you.
Here is one of them.
<Carrie> That's perfect.
<Julia> Here is everything.
<Carrie> It looks so good.
Oh my God.
I can't wait.
I'm so excited!
♪ [relaxing music] ♪ <Carrie> I'm just driving right towards WBTV, to bake biscuits on-air with their morning show.
And, hopefully, get the word out that we are opening Friday morning.
The goal is to get the host to taste and hopefully they'll, their knees will buckle and they will make oohs and ahhs and say, "oh my gosh, that's so delicious."
And then people's mouths will water and they'll remember to come see us.
Kristen, I'm Carrie.
<Kristen> Nice to meet you.
<Carrie> Thank you.
Thanks for having us.
<Kristen> Absolutely.
Everyone's all abuzz about the opening People in our newsroom, they're like, "I wish I could be first in line but I have to work that day."
<Carrie> Oh, I love that.
<woman> Four, three, two, one <Kristen> What you're doing right now is therapeutic <Carrie> It is therapeutic.
And you know, a lot of things have changed about Callie's over the 15 years of being in business.
The one thing that's never changed is that we do it the same exact way.
<Kristen> So, you have flour.
Is there butter in there too?
<Carrie> There is salted butter so we kind of break all the baking rules.
I use salted butter simply because I love salted butter.
We snap it in with our fingers.
That's what we call it until it resembles finely grated parmesan cheese.
We add double the fat.
<Kristen> Yes <Carrie> Double the fat, double the fun, and this is cream cheese.
♪ [light music] ♪ <Kristen> Oh my goodness!
Look at these biscuits!
>> How about that?
>> - a little butter on top.
<Carrie> Grand opening is on Friday, 10 o'clock, we're giving away gifts.
The first 10 people get free coffee for a year, we have swag bags for everyone in line, a free biscuit for everyone that comes in.
<Kristen> Oh my goodness.
♪ [relaxing music] ♪ >> In a perfect world, we want the whole store set up before the next press event.
>> We have Charlotte Agenda and in addition Charlotte Observer, now.
So both papers are coming.
>> It's going to be a little bit of a show to unpack a massive, food service order and bake off biscuits, fried chicken.
It's going to be a hustle for sure.
So, we need to hurry back to the store and see how we can help.
Look at y'all making biscuits.
Those bowls aren't big enough.
We ordered the wrong size bowls, they need bigger bowls.
Par for the course >> It's going to take three people.
One person on this side, one person in the middle And one person on that side.
<Employee> Oh, I see why.
>> You cannot hold on to the legs.
The legs are fragile.
Found it in this cool, antique store.
It's an old butcher block probably weighs 250 pounds.
As soon as I saw it, I knew it had to be our coffee station <Carrie> Yep.
Right here.
<Employee> Success.
<Employee> I'll get the trash can.
>> Doesn't it look like an old biscuit rolling station?
I love it.
Good job.

Thank y'all appreciate it.
<Carrie> Our team is going through some intense prep work right now.
Unfortunately, we don't have unlimited funds to be able to have a week of training.
We got two days.
It's almost like you need to go shy of two minutes.
We are prepping the fried chicken machine.
So we have a lot of things going on.
It's a fryer all in one.
So it has a suppression system.
There's no fumes.
It sounds too good to be true.
So, this is super cool.
You literally put it in here like this.
You close it, you hit start.
No?
[machine whirring] I hear it.
It's already gone.
It's down in the fryer.
And then it takes 11 minutes.
[machine whirring] >> We have an entire instruction manual about this too.
>> Yeah, but I didn't want to read an instruction manual.
I paid a lot of money for it.
I want that guy to come and program it.
<Tyler> Train everyone?
<Carrie> Heck yea.
Y'all listen for the beep of the egg.
That's what it is.
Oh, take it out.
Take it out.
[machine whirring] >> We need to open it.
I want the egg yolk to be, it still needs to be a little bit runnier but we'll have to play with it.
♪ [steady music] ♪ <Carrie> The first baking fail.
The great thing about this though, is it tastes really good.
But I'm kind of freaking because I have to leave soon.
I need to make a list.
Okay, we need three of those.
<Julia> Okay.
>> And then you need to ask Tyler about this.
But I haven't seen any quart containers, napkins.
>> This is the minute and a half that creates the runnyness she wants, this will be a minute and a half.
This is what they should look like when they open them up.
>> I smell that fried chicken fryer.
>> But we don't know how many minutes 9 is.
[laughter in background] >> I thought we did.
I don't know.
I'm tired.
I can't remember.
[laughing] <Carrie> We're racing against the clock because we got one full day tomorrow to train and the store's still not put together.
So yeah, I'm nervous.
Especially because I'm leaving here in two hours.
It's my daughter's birthday and I wouldn't miss that for anything.
It's going to be hard being in a different place and sleeping at night wondering has this been done?
Have we tested this?
<Tressa> I don't think being a woman in this industry you should have to give up certain things, like having a family, to run a successful business.
And that is from the beginning has always been why I've been driven to Callie's Hot Little Biscuit.
So, that's what I liked most about the company so far.
<Carrie> Happy birthday to you.
Cater's 13!
>> She said she was going to stay another day so I didn't think that she was going to come home.
<Carrie> Oh Lord, you got to do better than that, Cate.
♪ [bright music] ♪ <Carrie> We did her room.
I did a whole makeover.
Here's as good as it gets.
I'll see if she likes it.
She probably won't.
>> I was super shocked.
I like the bed, because it's like a couch in the daytime.
>> She was so pleased and then we had family dinner.
[clapping] ♪ [dramatic music] ♪ >> We have 24 hours until we open.
We're working hard, our team is here.
They're all training.
We're learning a lot right now.
How should bacon be cooked?
<Employee> Crispy!
>> So, what do we keep our ovens at?
<Employees> 350?
>> 350.
>> Don't be scared girl.
Get all in there, pour it all in there.
You might need more buttermilk.
♪ <Tressa> So the basil salt and pepper and lemon zest go together.
<Tyler> That should yield one quart of lemon-basil mayo.
♪ [dramatic music] ♪ This is our first store opening by ourselves.
So, it's a learning curve.
>> I have not heard from Carrie today.
♪ [upbeat bluegrass music] ♪ Hey, hey, hey.
We need a sausage gravy pot because we don't have that and we need to make sausage gravy.
Okay?
Thank you.
♪ [upbeat bluegrass music] ♪ <Employee> We got flour.
♪ [upbeat bluegrass music] ♪ ♪ [pop music] ♪ <Tressa> We have some lovely people out there already waiting for our specialty biscuits.
So we're ready to go.
<Customer> We saw the ad for free coffee for a year for the first 10 people in line.

[cheering] <Tressa> There's the coffee!
<Customer> Thank you.
♪ [slow pop music] ♪ >> We've been driving since 4 a.m.
It's freezing and I'm nervous.
♪ Oh my God!
There are people waiting outside.
And there are balloons!
Oh!
I love it.
I love it!
Oh my God.
I can't wait.
I don't know where I'm going to park...Oh.
<Tarah> When I got here it was 35 degrees.
But that was at 7 and most of these people have been out here since 5:30 a.m. ♪ [upbeat music] ♪ >> I'm getting ready to go out and welcome all these people in.
Please spread the buttery love and give them all of your energy.
Kick biscuit butt!
[everyone cheers] ♪ [upbeat music] ♪ <customer> It's delicious.
>> It's looking great!

♪ <Carrie> So do we have any idea of our ticket times?
<Employee> Right now?
We're roughly at about five minutes.
<Carrie> Oh my gosh, amazing.
♪ <Tressa> From there, it went down to 3 minutes to 2 minutes.
Then, we had a 1 - 2 minute ticket time.
<Employee> Thank you so much for coming by.
<Customer> Are you kidding?
I wouldn't have missed it.
<Customer> Oh, look at that, sin in a box.
♪ [upbeat music] ♪ <Carrie> We used over 50 pounds of butter just for baking biscuits in only four hours.
♪ [upbeat music] ♪ >> I worked every station, well for a few reasons.
But I wanted to make sure everybody was doing it the way I wanted them to do it.
But I also needed to understand if there were going to be hiccups.
>> Did somebody mess with my chicken machine?
Why is it not working?
Hello anybody home?
All right, let's just go back to the basics then.
There you go.
That's what it was.
That's not going to work if I can only fry two pieces of chicken at a time.
<Carrie> This needs, bacon and egg.
Thank you.
That is the chicken, then that order's ready to go.
Those are not quite frozen, so put those back but everything else can go to a big bin with parchment in between each layer.
Okay.
Okay, I'm prepared.
Yes!
♪ [upbeat music] ♪ <Customer> I got the fried chicken <Carrie> How was it?
>> It was good.
I enjoyed it.
>> Was it well cooked?
>> I thought so.
>> Okay, good.
I've only known Tressa for two weeks.
Don't you want to work in a place that's positive and fun?
And Tressa has certainly created that and I couldn't ask for anything more.
♪ [upbeat music] ♪ <Tressa> We have locked our doors, we're cleaning up.
As predicted, I am tired and on the floor, so... <Carrie> I was terrified when I saw that line.
I just know what that means for behind the line and y'all killed it.
